Cheesemaker Jack Holman is formerly of Yarra Valley Cheese Company, where he oversaw production of some of the most popular artisan cheeses in Australia.

Stone & Crow is Jack’s personal project, where he gets to dabble in new styles and unleash his cheesemaker creativity on a smaller scale and is working towards creating an all encompassing maturation facility in Healesville. Each season, Jack gets together with some special mates and they head out into the bush for a night walk. On one night walk, Jack pulled out a new cheese he had been working on, and his mates loved it. The cheese was named NightWalker, and it now makes an appearance on every night walk. Jack says it’s a great cheese to share with your mates.

This washed rind cheese is quite lactic and creamy with a rind that is mildly chewy and lends a rather piquant flavour to the cheese. it has a great length of flavour with meaty notes and a rather Moreish finish in the middle of your tongue that makes you want more!
